I work in my kitchen, inspired by the nature that surrounds us, with the aim of preserving it as much as possible and above all of respecting the men and women who make the complexity of our territory.

Our Table is lively and authentic. The perfect place where Corsican traditions blend with contemporary and modern life, where visitors and locals mingle, where you can hear Corsican spoken as well as many languages around a board of our charcuterie, a dish of stuffed garden vegetables, and a good bottle of wine.

From farm to table, from table to Hotel Kallisté, every action here is driven by the desire to rediscover what our natural and especially human terroir offers us best.
The products from our farm are naturally given the spotlight, their quality is such that the work of the chef lies in the utmost respect. The technique here is at the service of taste. No showmanship.
